German raw apple cake

Ingredients

  • 1 tsp vanilla
  • 1/2 cup butter
  • 1 cup sugar
  • 1 egg
  • 1 1/4 cup flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 1/2 tsp cinnamon
  • 1 tsp baking soda
  • 2 cups chopped raw peeled apples
  • 1/2 cup pecans
  • 1/2 cup raisins

Directions

Preheat oven to 350 degrees

 

Cream together vanilla, butter, sugar and egg, very well. Mix together dry ingredients (flour, baking powder, baking soda, salt and cinnamon). Add to creamed mixture. Add chopped apples, pecans and raisins. Press into 8x8 pan.

 

Bake for 35 minutes.

 

SAUCE: 1 stick butter, 1/2 cup sugar, 1/2 cup brown sugar, 1 tsp vanilla, 2 tbsp flour or cornstarch, 2 cups water or 1/2 water and 1/2 evaporated milk. Boil all ingredients until a puddling-like consistency. Serve over sliced cake.


History

One of Mitzi's coworkers from Mulkey's Carriage House brought this to a Christmas party and gave Mitzi the recipe. She later served it when she first opened her antique store in Toledo, Iowa.
